Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.
  2. Stir in the shredded chicken, cumin, chili powder, smoked paprika, salt, and black pepper. Mix well to combine.
  3. Pour in the chicken broth and bring the mixture to a simmer. Reduce the heat to low and let it cook for about 10 minutes, allowing the flavors to meld and the chicken to heat through.
  4. While the chicken is cooking, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.
  5. To assemble the tacos, place a generous portion of the shredded chicken mixture onto each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheese, a dollop of sour cream, and a sprinkle of fresh cilantro.
  6. Serve immediately with lime wedges on the side for squeezing over the tacos.
