Instructions
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the shredded chicken, cumin, chili powder, smoked paprika, salt, and black pepper. Mix well to combine.
- Pour in the chicken broth and bring the mixture to a simmer. Reduce the heat to low and let it cook for about 10 minutes, allowing the flavors to meld and the chicken to heat through.
- While the chicken is cooking, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.
- To assemble the tacos, place a generous portion of the shredded chicken mixture onto each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheese, a dollop of sour cream, and a sprinkle of fresh cilantro.
- Serve immediately with lime wedges on the side for squeezing over the tacos.
