Shredded Beef Taquitos are a crispy baked delight filled with seasoned shredded beef and cheese, perfect for a quick meal or snack.


Ingredients

  • 2 cups cooked shredded beef (such as brisket or roast)
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper (any color)
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 corn tortillas
  • Cooking spray
  • Fresh cilantro, for garnish (optional)
  • Sour cream or salsa, for serving (optional)

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a large mixing bowl, combine the shredded beef, cheddar cheese, onion, bell pepper, garlic powder, cumin, chili powder, salt, and black pepper. Mix well until all ingredients are evenly combined.
  3. Warm the corn tortillas in a microwave for about 30 seconds to make them pliable. This will help prevent them from cracking when rolling.
  4. Take one tortilla and place about 2 tablespoons of the beef mixture in the center. Roll the tortilla tightly around the filling and place it seam-side down on the prepared baking sheet. Repeat with the remaining tortillas and filling.
  5. Lightly spray the tops of the taquitos with cooking spray to help them crisp up in the oven.
  6. Bake in the preheated oven for 15-20 minutes, or until the taquitos are golden brown and crispy.
  7. Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro if desired and serve with sour cream or salsa.
