- 2 cups cooked shredded beef (such as brisket or roast)
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1/2 cup diced bell pepper (any color)
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 12 corn tortillas
- Cooking spray
- Fresh cilantro, for garnish (optional)
- Sour cream or salsa, for serving (optional)
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- In a large mixing bowl, combine the shredded beef, cheddar cheese, onion, bell pepper, garlic powder, cumin, chili powder, salt, and black pepper. Mix well until all ingredients are evenly combined.
- Warm the corn tortillas in a microwave for about 30 seconds to make them pliable. This will help prevent them from cracking when rolling.
- Take one tortilla and place about 2 tablespoons of the beef mixture in the center. Roll the tortilla tightly around the filling and place it seam-side down on the prepared baking sheet. Repeat with the remaining tortillas and filling.
- Lightly spray the tops of the taquitos with cooking spray to help them crisp up in the oven.
- Bake in the preheated oven for 15-20 minutes, or until the taquitos are golden brown and crispy.
- Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro if desired and serve with sour cream or salsa.

- For a spicier kick, add diced jalapeños or a dash of hot sauce to the beef mixture.
- Substitute the shredded beef with shredded chicken or black beans for a different flavor profile.
