Ingredients

  • 1 pound ground beef or lamb
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups frozen mixed vegetables (peas, carrots, corn)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups beef broth
  • 2 tablespoons cornstarch mixed with 2 tablespoons water (optional, for thickening)
  • 4 cups frozen tater tots
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 400°F.
  2. In a large skillet over medium heat, cook the ground beef or lamb until browned. Drain excess fat if necessary.
  3. Add the diced onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
  4. Stir in the frozen mixed vegetables, Worcestershire sauce, thyme, salt, and pepper.
  5. Pour in the beef broth and bring to a simmer.
  6. If you prefer a thicker filling, stir in the cornstarch mixture and cook until the sauce thickens, about 2-3 minutes.
  7. Transfer the meat and vegetable mixture to a 9×13-inch baking dish.
  8. Evenly spread the frozen tater tots over the top of the meat mixture.
  9. Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and crispy.
  10. Remove from the oven and sprinkle shredded cheddar cheese over the top.
  11. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  12. Let the casserole cool for a few minutes before serving.
