Instructions
- In a large bowl, combine the shaved rainbow carrots, cucumber, red bell pepper, green onions, and cilantro. Toss gently to mix the vegetables evenly.
- In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, honey, grated ginger, and minced garlic until well combined.
- Pour the dressing over the salad and toss to coat all the vegetables evenly.
- Sprinkle the toasted sesame seeds on top and give the salad a final toss.
- For best flavor, let the salad sit for about 15 minutes before serving to allow the dressing to soak in.
