Ingredients

  • 1 cup cooked shrimp, peeled and deveined
  • 1 cup imitation crab meat, shredded
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced cucumber
  • 1/4 cup red onion, finely chopped
  • 1/4 cup black olives, sliced
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooked pasta, shrimp, imitation crab meat, cherry tomatoes, cucumber, red onion, and black olives.
  3. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, dried dill, salt, and pepper until smooth.
  4. Pour the dressing over the pasta and seafood mixture. Toss gently until everything is evenly coated.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
