Instructions
- In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined and slightly frothy.
- Heat the olive oil or butter in a non-stick skillet over medium heat.
- Add the chopped spinach to the skillet and sauté for 1-2 minutes until wilted.
- Pour the egg mixture into the skillet with the spinach. Allow it to cook undisturbed for about 1 minute.
- Gently stir the eggs with a spatula, pushing them from the edges toward the center. Continue cooking, stirring occasionally, until the eggs are just set but still slightly soft, about 3-4 minutes.
- If using cheese, sprinkle it over the eggs during the last minute of cooking, allowing it to melt.
- Remove from heat and serve immediately.
