- 2 pork tenderloins (about 1 pound each)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- 1 tablespoon Dijon mustard
- 1/2 cup heavy cream
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F.
- Pat the pork tenderloins dry with paper towels. In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, and rosemary. Rub this spice mixture all over the pork tenderloins.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the pork tenderloins and sear for about 3-4 minutes on each side until browned.
- Transfer the skillet to the preheated oven and roast the pork for 20-25 minutes, or until the internal temperature reaches 145°F. Remove from the oven and let it rest for 5-10 minutes.
- While the pork is resting, prepare the creamy Dijon sauce. In the same skillet, reduce the heat to medium and add the Dijon mustard and heavy cream. Stir well, scraping up any browned bits from the bottom of the skillet. Cook for 2-3 minutes until the sauce thickens slightly.
- Slice the pork tenderloins into medallions and serve drizzled with the creamy Dijon sauce. Garnish with fresh parsley.
Notes
- For a sweeter sauce, add a tablespoon of honey or maple syrup to the creamy Dijon sauce.
- Serve with roasted vegetables or mashed potatoes for a complete meal.
