- 3 to 4 pounds beef chuck roast
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 cup dry red wine
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 4 large carrots, cut into chunks
- 4 medium potatoes, cut into chunks
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 325°F (165°C).
- Season the beef chuck roast generously with salt and pepper on all sides.
- In a large Dutch oven, heat the olive oil over medium-high heat. Once hot, sear the roast for about 4-5 minutes on each side until browned. Remove the roast and set aside.
- In the same pot, add the sliced onions and cook, stirring occasionally, until they are caramelized, about 15-20 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
- Pour in the beef broth, red wine, and Worcestershire sauce, scraping the bottom of the pot to deglaze. Stir in the thyme and rosemary.
- Return the roast to the pot, nestling it among the onions. Add the carrots and potatoes around the roast.
- Cover the pot with a lid and transfer it to the preheated oven. Cook for 3 to 4 hours, or until the meat is tender and easily shreds with a fork.
- Once done, remove the pot from the oven and let it rest for about 10 minutes before serving. Garnish with fresh parsley.
Notes
- For a richer flavor, consider adding a tablespoon of balsamic vinegar to the broth mixture.
- You can substitute the red wine with an equal amount of beef broth for a non-alcoholic version.
