Description

Ingredients

  • 3 to 4 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup dry red wine
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 4 large carrots, cut into chunks
  • 4 medium potatoes, cut into chunks
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Season the beef chuck roast generously with salt and pepper on all sides.
  3. In a large Dutch oven, heat the olive oil over medium-high heat. Once hot, sear the roast for about 4-5 minutes on each side until browned. Remove the roast and set aside.
  4. In the same pot, add the sliced onions and cook, stirring occasionally, until they are caramelized, about 15-20 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
  5. Pour in the beef broth, red wine, and Worcestershire sauce, scraping the bottom of the pot to deglaze. Stir in the thyme and rosemary.
  6. Return the roast to the pot, nestling it among the onions. Add the carrots and potatoes around the roast.
  7. Cover the pot with a lid and transfer it to the preheated oven. Cook for 3 to 4 hours, or until the meat is tender and easily shreds with a fork.
  8. Once done, remove the pot from the oven and let it rest for about 10 minutes before serving. Garnish with fresh parsley.

Notes

  • For a richer flavor, consider adding a tablespoon of balsamic vinegar to the broth mixture.
  • You can substitute the red wine with an equal amount of beef broth for a non-alcoholic version.
