Description

A delicious and easy recipe for savory filet mignon served in a creamy peppercorn sauce.


Ingredients

  • 2 (6-ounce) filet mignon steaks
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 shallot, finely chopped
  • 1 tablespoon green peppercorns, drained and rinsed
  • 1/2 cup beef broth
  • 1/2 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • Fresh parsley, chopped, for garnish

Instructions

  1. Take the filet mignon out of the refrigerator and let it sit at room temperature for about 30 minutes. Season both sides generously with salt and freshly ground black pepper.
  2. In a large skillet, heat the olive oil over medium-high heat. Once hot, add the filet mignon steaks and sear for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove the steaks from the skillet and let them rest on a plate, loosely covered with foil.
  3. In the same skillet, reduce the heat to medium and add the butter. Once melted, add the chopped shallot and sauté for 2-3 minutes until softened.
  4. Stir in the green peppercorns and cook for another minute. Pour in the beef broth, scraping up any browned bits from the bottom of the skillet. Allow it to simmer for about 3-4 minutes until reduced by half.
  5. Lower the heat and stir in the heavy cream, Dijon mustard, and Worcestershire sauce. Cook for an additional 3-4 minutes, stirring occasionally, until the sauce thickens slightly.
  6. Return the filet mignon to the skillet, spooning the sauce over the steaks. Cook for another minute to warm through.
  7. Serve the filet mignon topped with the creamy peppercorn sauce and garnish with chopped parsley.

Notes

  • For a spicier kick, add a pinch of crushed red pepper flakes to the sauce.
  • Substitute the green peppercorns with crushed black peppercorns for a bolder flavor.
