Instructions
- Heat a large skillet over medium heat and add the breakfast sausage, cooking until browned and fully cooked.
- Drain any excess fat and set the sausage aside.
- In a separate bowl, whisk together the eggs, milk, salt, and black pepper until smooth.
- Pour the egg mixture into the skillet and cook gently, stirring occasionally until the eggs are fluffy and just set.
- On a clean surface, lay out the whole wheat tortillas and distribute the cooked sausage, scrambled eggs, and shredded mozzarella evenly across each tortilla.
- Fold in the sides and roll each tortilla tightly from one end to create burrito bites.
- Heat the avocado oil in the skillet over medium heat and place the burrito bites seam side down.
- Cook for about 2-3 minutes on each side until golden and crispy.
- Remove from the skillet and allow to cool slightly before slicing in half for serving.
