Description

A delicious and hearty dish featuring frozen pierogi baked with smoked sausage, fresh vegetables, and topped with melted cheddar cheese.


Ingredients

  • 2 cups frozen pierogi (potato and cheese or your choice)
  • 1 pound smoked sausage, sliced
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 cups fresh spinach, roughly chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream (for serving)

Instructions

  1. Preheat the oven to 375°F.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
  3. Add the chopped onion and bell pepper to the skillet. Sauté for another 5 minutes until the vegetables are softened.
  4. Stir in the chopped spinach, garlic powder, paprika, salt, and pepper. Cook for an additional 2-3 minutes until the spinach is wilted.
  5. In a greased 9×13 inch baking dish, spread the frozen pierogi evenly across the bottom.
  6. Pour the sausage and veggie mixture over the pierogi, spreading it out evenly.
  7. Sprinkle the shredded cheddar cheese on top.
  8. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before serving with sour cream on the side.

Notes

  • For a lighter version, substitute turkey sausage for smoked sausage.
  • You can also add other vegetables like mushrooms or zucchini for extra flavor and nutrition.
  • If you prefer a crispy topping, add breadcrumbs mixed with a little melted butter on top before the final bake.
