Description
A delicious and hearty dish featuring frozen pierogi baked with smoked sausage, fresh vegetables, and topped with melted cheddar cheese.

- 2 cups frozen pierogi (potato and cheese or your choice)
- 1 pound smoked sausage, sliced
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 cups fresh spinach, roughly chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream (for serving)
Instructions
- Preheat the oven to 375°F.
- In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
- Add the chopped onion and bell pepper to the skillet. Sauté for another 5 minutes until the vegetables are softened.
- Stir in the chopped spinach, garlic powder, paprika, salt, and pepper. Cook for an additional 2-3 minutes until the spinach is wilted.
- In a greased 9×13 inch baking dish, spread the frozen pierogi evenly across the bottom.
- Pour the sausage and veggie mixture over the pierogi, spreading it out evenly.
- Sprinkle the shredded cheddar cheese on top.
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving with sour cream on the side.
Notes
- For a lighter version, substitute turkey sausage for smoked sausage.
- You can also add other vegetables like mushrooms or zucchini for extra flavor and nutrition.
- If you prefer a crispy topping, add breadcrumbs mixed with a little melted butter on top before the final bake.
