- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 large egg
- 2 teaspoons Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup beef broth
- 1 tablespoon cornstarch
- 1 tablespoon water
- 1 tablespoon soy sauce
- 1 tablespoon ketchup
- 1 teaspoon Dijon mustard
- 2 pounds russet potatoes, peeled and cubed
- 1/2 cup milk
- 4 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh chives
Instructions
- Preheat the oven to 400°F. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Form the mixture into meatballs, about 1.5 inches in diameter. Place the meatballs on a baking sheet lined with parchment paper.
- Drizzle olive oil over the meatballs and bake for 20-25 minutes or until cooked through and browned.
- While the meatballs are baking, prepare the gravy. In a small saucepan, combine beef broth, soy sauce, ketchup, and Dijon mustard. In a separate small bowl, mix cornstarch and water until smooth, then add to the saucepan. Cook over medium heat, stirring until thickened.
- For the mashed potatoes, boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.
- Add milk, butter, minced garlic, chives, salt, and pepper to the potatoes. Mash until smooth and creamy.
- Serve the meatballs over the garlic herb mashed potatoes, drizzled with gravy.
Notes
- For a lighter version, substitute ground turkey or chicken for the beef.
- Add sautéed mushrooms to the gravy for extra flavor and texture.
