Description

Salisbury Steak Meatballs with Garlic Herb Mashed Potatoes are a delicious dinner hit!


Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup beef broth
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 tablespoon soy sauce
  • 1 tablespoon ketchup
  • 1 teaspoon Dijon mustard
  • 2 pounds russet potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh chives

Instructions

  1. Preheat the oven to 400°F. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  2. Form the mixture into meatballs, about 1.5 inches in diameter. Place the meatballs on a baking sheet lined with parchment paper.
  3. Drizzle olive oil over the meatballs and bake for 20-25 minutes or until cooked through and browned.
  4. While the meatballs are baking, prepare the gravy. In a small saucepan, combine beef broth, soy sauce, ketchup, and Dijon mustard. In a separate small bowl, mix cornstarch and water until smooth, then add to the saucepan. Cook over medium heat, stirring until thickened.
  5. For the mashed potatoes, boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.
  6. Add milk, butter, minced garlic, chives, salt, and pepper to the potatoes. Mash until smooth and creamy.
  7. Serve the meatballs over the garlic herb mashed potatoes, drizzled with gravy.

Notes

  • For a lighter version, substitute ground turkey or chicken for the beef.
  • Add sautéed mushrooms to the gravy for extra flavor and texture.
