A delicious recipe for Roasted Beef Medallions served with a creamy onion gravy, perfect for a hearty meal.

- 1 pound beef tenderloin, cut into 1-inch thick medallions
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 cup heavy cream
- 1 tablespoon Worcestershire sauce
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Season the beef medallions with salt and black pepper on both sides.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the beef medallions and sear for 3-4 minutes on each side until browned. Remove the medallions from the skillet and set aside.
- In the same skillet, add the sliced onion and cook for about 5 minutes until softened. Add the minced garlic and cook for an additional minute.
- Pour in the beef broth, scraping up any browned bits from the bottom of the skillet. Stir in the Worcestershire sauce and thyme.
- Reduce the heat to low and stir in the heavy cream. Allow the mixture to simmer for 2-3 minutes until slightly thickened.
- Return the beef medallions to the skillet, spooning some of the gravy over them. Transfer the skillet to the preheated oven and roast for 10-12 minutes for medium-rare, or until desired doneness is reached.
- Remove the skillet from the oven and let the beef rest for 5 minutes. Garnish with chopped parsley before serving.
Notes
- For a richer flavor, add a splash of red wine to the gravy before simmering.
- Substitute the beef with pork tenderloin for a different twist on this dish.
