Description

A delicious recipe for Roasted Beef Medallions served with a creamy onion gravy, perfect for a hearty meal.


Ingredients

  • 1 pound beef tenderloin, cut into 1-inch thick medallions
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the beef medallions with salt and black pepper on both sides.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the beef medallions and sear for 3-4 minutes on each side until browned. Remove the medallions from the skillet and set aside.
  4. In the same skillet, add the sliced onion and cook for about 5 minutes until softened. Add the minced garlic and cook for an additional minute.
  5. Pour in the beef broth, scraping up any browned bits from the bottom of the skillet. Stir in the Worcestershire sauce and thyme.
  6. Reduce the heat to low and stir in the heavy cream. Allow the mixture to simmer for 2-3 minutes until slightly thickened.
  7. Return the beef medallions to the skillet, spooning some of the gravy over them. Transfer the skillet to the preheated oven and roast for 10-12 minutes for medium-rare, or until desired doneness is reached.
  8. Remove the skillet from the oven and let the beef rest for 5 minutes. Garnish with chopped parsley before serving.

Notes

  • For a richer flavor, add a splash of red wine to the gravy before simmering.
  • Substitute the beef with pork tenderloin for a different twist on this dish.
