- 2 ripe mangoes, peeled, pitted, and diced
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced (optional)
- Juice of 2 limes
- 2 tablespoons olive oil
- 1 tablespoon honey or agave syrup
- Salt and pepper to taste
Instructions
- In a large bowl, combine the diced mangoes, red bell pepper, cucumber, red onion, cilantro, and jalapeño (if using).
- In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper until well combined.
- Pour the dressing over the salad and gently toss to coat all the ingredients evenly.
- Let the salad sit for about 15 minutes to allow the flavors to meld.
- Serve chilled or at room temperature.
Notes
- For added crunch, toss in some toasted nuts or seeds, such as almonds or sunflower seeds.
- Substitute the mango with diced pineapple or peaches for a different fruity twist.
