Description

Delicious Red Velvet Cupcake Cookies that combine the flavors of red velvet cake with the texture of a cookie.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 tablespoon cocoa powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 1 cup white chocolate chips
  • ½ cup cream cheese frosting (store-bought or homemade)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  4. Add the egg, red food coloring, vanilla extract, and almond extract to the butter mixture. Mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the white chocolate chips.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are set. The centers may look slightly underbaked; they will firm up as they cool.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  10. Once cooled, use a piping bag or a small spatula to add a dollop of cream cheese frosting on top of each cookie.

Notes

  • For a richer flavor, consider adding ½ teaspoon of espresso powder to the dry ingredients.
  • You can substitute the white chocolate chips with semi-sweet chocolate chips for a different taste.
  • If you prefer a more cake-like texture, chill the dough for 30 minutes before baking.
