A delicious dish featuring red snapper and shrimp served over creamy grits with a flavorful Cajun cream sauce.

- 1 pound red snapper fillets
- 1 pound shrimp, peeled and deveined
- 1 cup grits
- 4 cups water
- 1 cup heavy cream
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 cup diced bell peppers (red and green)
- 1/2 cup diced onion
- 2 cloves garlic, minced
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a medium saucepan, bring 4 cups of water to a boil. Slowly whisk in the grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally, until thickened. Remove from heat and stir in 1 tablespoon of butter and salt to taste.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and bell peppers, sautéing until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.
- Season the shrimp with Cajun seasoning, salt, and pepper. Add the shrimp to the skillet and cook until pink and opaque, about 3-4 minutes. Remove the shrimp and set aside.
- In the same skillet, add the red snapper fillets. Cook for about 4-5 minutes per side, or until the fish flakes easily with a fork. Remove the fish and keep warm.
- Pour the heavy cream into the skillet, scraping up any browned bits from the bottom. Stir in the remaining Cajun seasoning and simmer for 3-4 minutes until slightly thickened. Adjust seasoning with salt and pepper.
- To serve, spoon the grits onto plates, top with red snapper and shrimp, and drizzle with Cajun cream sauce. Garnish with chopped green onions.
Notes
- For a spicier kick, add a dash of hot sauce to the Cajun cream sauce.
- Substitute the red snapper with tilapia or catfish for a different flavor profile.
