Description

A delicious dish featuring red snapper and shrimp served over creamy grits with a flavorful Cajun cream sauce.


Ingredients

  • 1 pound red snapper fillets
  • 1 pound shrimp, peeled and deveined
  • 1 cup grits
  • 4 cups water
  • 1 cup heavy cream
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 cup diced bell peppers (red and green)
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a medium saucepan, bring 4 cups of water to a boil. Slowly whisk in the grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally, until thickened. Remove from heat and stir in 1 tablespoon of butter and salt to taste.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and bell peppers, sautéing until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.
  3. Season the shrimp with Cajun seasoning, salt, and pepper. Add the shrimp to the skillet and cook until pink and opaque, about 3-4 minutes. Remove the shrimp and set aside.
  4. In the same skillet, add the red snapper fillets. Cook for about 4-5 minutes per side, or until the fish flakes easily with a fork. Remove the fish and keep warm.
  5. Pour the heavy cream into the skillet, scraping up any browned bits from the bottom. Stir in the remaining Cajun seasoning and simmer for 3-4 minutes until slightly thickened. Adjust seasoning with salt and pepper.
  6. To serve, spoon the grits onto plates, top with red snapper and shrimp, and drizzle with Cajun cream sauce. Garnish with chopped green onions.

Notes

  • For a spicier kick, add a dash of hot sauce to the Cajun cream sauce.
  • Substitute the red snapper with tilapia or catfish for a different flavor profile.
