Description
A delicious Raspberry Swirl Brioche Loaf that combines the richness of brioche with the tartness of raspberry jam.

- 2 1/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon salt
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1/2 cup whole milk, warmed to about 110°F
- 1/4 cup unsalted butter, melted
- 3 large eggs, at room temperature
- 1/2 cup raspberry jam
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 egg, beaten (for egg wash)
Instructions
- In a large mixing bowl, combine the flour, sugar, and salt.
- In a separate bowl, mix the warm milk and yeast, letting it sit for about 5 minutes until frothy.
- Add the melted butter, eggs, vanilla extract, and lemon juice to the yeast mixture, then pour it into the dry ingredients. Mix until a dough forms.
- Knead the dough on a lightly floured surface for about 8-10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
- Once risen, punch down the dough and roll it out into a rectangle about 1/2 inch thick.
- Spread the raspberry jam evenly over the dough.
- Starting from one long edge, roll the dough tightly into a log. Pinch the seams to seal.
- With a sharp knife, slice the log in half lengthwise, exposing the raspberry swirl.
- Twist the two halves together and place in a greased 9×5 inch loaf pan.
- Cover and let rise for another 30-45 minutes, or until puffed.
- Preheat the oven to 350°F.
- Brush the top of the loaf with the beaten egg.
- Bake for 25-30 minutes, or until golden brown and the loaf sounds hollow when tapped.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For a richer flavor, try adding a teaspoon of almond extract to the dough.
- You can substitute the raspberry jam with your favorite fruit preserves, such as strawberry or blueberry, for a different twist.
