A delicious Raspberry Swirl Brioche Loaf that combines the richness of brioche with the tartness of raspberry jam.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1/2 cup whole milk, warmed to about 110°F
  • 1/4 cup unsalted butter, melted
  • 3 large eggs, at room temperature
  • 1/2 cup raspberry jam
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large mixing bowl, combine the flour, sugar, and salt.
  2. In a separate bowl, mix the warm milk and yeast, letting it sit for about 5 minutes until frothy.
  3. Add the melted butter, eggs, vanilla extract, and lemon juice to the yeast mixture, then pour it into the dry ingredients. Mix until a dough forms.
  4. Knead the dough on a lightly floured surface for about 8-10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
  6. Once risen, punch down the dough and roll it out into a rectangle about 1/2 inch thick.
  7. Spread the raspberry jam evenly over the dough.
  8. Starting from one long edge, roll the dough tightly into a log. Pinch the seams to seal.
  9. With a sharp knife, slice the log in half lengthwise, exposing the raspberry swirl.
  10. Twist the two halves together and place in a greased 9×5 inch loaf pan.
  11. Cover and let rise for another 30-45 minutes, or until puffed.
  12. Preheat the oven to 350°F.
  13. Brush the top of the loaf with the beaten egg.
  14. Bake for 25-30 minutes, or until golden brown and the loaf sounds hollow when tapped.
  15. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For a richer flavor, try adding a teaspoon of almond extract to the dough.
