Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the softened butter, eggs, vanilla extract, milk, lemon zest, and lemon juice to the dry ingredients. Beat on medium speed for about 2 minutes until well combined and smooth.
  4. Gently fold in the fresh raspberries, being careful not to crush them.
  5. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
