- 1 cup cooked quinoa
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup diced onion
- 2 cloves garlic, minced
- 2 large eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- 2 tablespoons olive oil (for frying)
Instructions
- In a large mixing bowl, combine the cooked quinoa, breadcrumbs, Parmesan cheese, parsley, onion, garlic, eggs, salt, black pepper, paprika, and cayenne pepper. Mix well until all ingredients are evenly incorporated.
- Form the mixture into patties, about 2-3 inches in diameter. You should have approximately 8 patties.
- Heat the olive oil in a large skillet over medium heat. Once hot, add the patties in batches, being careful not to overcrowd the pan.
- Cook each patty for about 4-5 minutes on each side, or until golden brown and crispy.
- Remove the patties from the skillet and place them on a paper towel-lined plate to absorb any excess oil.
- Serve warm, either on their own or with a dipping sauce of your choice.
Notes
- For a gluten-free version, substitute the breadcrumbs with crushed gluten-free crackers or almond flour.
- Add chopped vegetables like bell peppers or spinach to the mixture for extra flavor and nutrition.
