  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 tablespoons olive oil (for frying)

Instructions

  1. In a large mixing bowl, combine the cooked quinoa, breadcrumbs, Parmesan cheese, parsley, onion, garlic, eggs, salt, black pepper, paprika, and cayenne pepper. Mix well until all ingredients are evenly incorporated.
  2. Form the mixture into patties, about 2-3 inches in diameter. You should have approximately 8 patties.
  3. Heat the olive oil in a large skillet over medium heat. Once hot, add the patties in batches, being careful not to overcrowd the pan.
  4. Cook each patty for about 4-5 minutes on each side, or until golden brown and crispy.
  5. Remove the patties from the skillet and place them on a paper towel-lined plate to absorb any excess oil.
  6. Serve warm, either on their own or with a dipping sauce of your choice.
