Ingredients

- 2 cups fresh kale, chopped and stems removed
- 1 cup all-purpose flour
- 1 cup milk
- 1/2 cup shredded cheddar cheese
- 1/4 cup butter, melted
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced tomatoes (fresh or canned)
- 1/4 cup green onions, sliced
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish or a similar baking dish.
- In a large mixing bowl, combine the chopped kale, diced tomatoes, and green onions. Stir until well mixed.
- In another bowl, whisk together the flour, baking powder, salt, and black pepper.
- In a separate bowl, mix the melted butter, milk, and eggs until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
- Fold in the kale mixture and half of the shredded cheddar cheese.
- Pour the mixture into the prepared pie dish and spread it evenly.
- Sprinkle the remaining cheddar cheese on top.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Allow to cool for 5-10 minutes before slicing and serving.

- For added flavor, consider mixing in cooked bacon or sausage to the kale mixture.
