Description

Ingredients

  • 2 sheets of frozen puff pastry, thawed
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)

Instructions

  1. Preheat the oven to 400°F.
  2. Roll out each sheet of puff pastry on a lightly floured surface to smooth out creases.
  3. Cut each sheet into a rectangle, approximately 9×6 inches.
  4. Place the rectangles on a baking sheet lined with parchment paper.
  5. In a small bowl, whisk together the egg and milk to make an egg wash.
  6. Brush the tops of the puff pastry rectangles with the egg wash.
  7. Bake for 15-20 minutes or until golden brown and puffed.
  8. Remove from the oven and let cool completely.
  9. In a mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Beat with an electric mixer on medium-high speed until stiff peaks form.
  10. In another bowl, toss the mixed berries with lemon juice, cornstarch, and water. Let sit for 10 minutes to allow the juices to release.
  11. Once the puff pastry is cool, carefully slice each rectangle in half horizontally.
  12. Spread a generous layer of whipped cream on the bottom half of each pastry, then top with a layer of the berry mixture.
  13. Place the top half of the pastry back on and dust with additional powdered sugar if desired.
  14. Serve immediately or refrigerate for up to 2 hours before serving.

Notes

  • For a richer flavor, try adding a tablespoon of lemon zest to the whipped cream.
  • You can substitute the mixed berries with your favorite fruits, such as peaches or cherries, for a different twist.
