A delightful treat made with layers of puff pastry, whipped cream, and mixed berries.

- 2 sheets of frozen puff pastry, thawed
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 tablespoon water
- 1 egg (for egg wash)
- 1 tablespoon milk (for egg wash)
Instructions
- Preheat the oven to 400°F.
- Roll out each sheet of puff pastry on a lightly floured surface to smooth out creases.
- Cut each sheet into a rectangle, approximately 9×6 inches.
- Place the rectangles on a baking sheet lined with parchment paper.
- In a small bowl, whisk together the egg and milk to make an egg wash.
- Brush the tops of the puff pastry rectangles with the egg wash.
- Bake for 15-20 minutes or until golden brown and puffed.
- Remove from the oven and let cool completely.
- In a mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Beat with an electric mixer on medium-high speed until stiff peaks form.
- In another bowl, toss the mixed berries with lemon juice, cornstarch, and water. Let sit for 10 minutes to allow the juices to release.
- Once the puff pastry is cool, carefully slice each rectangle in half horizontally.
- Spread a generous layer of whipped cream on the bottom half of each pastry, then top with a layer of the berry mixture.
- Place the top half of the pastry back on and dust with additional powdered sugar if desired.
- Serve immediately or refrigerate for up to 2 hours before serving.
Notes
- For a richer flavor, try adding a tablespoon of lemon zest to the whipped cream.
- You can substitute the mixed berries with your favorite fruits, such as peaches or cherries, for a different twist.
