- 2 pounds bone-in, skin-on chicken thighs
- 1/4 cup olive oil
- 1/4 cup white wine vinegar
- 1 tablespoon smoked paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- Juice of 1 lemon
- Fresh parsley, chopped (for garnish)
Instructions
- In a large bowl, whisk together the olive oil, white wine vinegar, smoked paprika, garlic powder, onion powder, oregano, thyme, salt, black pepper, red pepper flakes (if using), and lemon juice to create the marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight for maximum flavor.
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade and let any excess drip off. Discard the remaining marinade.
- Place the chicken skin-side down on the grill. Cook for about 6-8 minutes, then flip and cook for another 6-8 minutes, or until the internal temperature reaches 165°F and the skin is crispy.
- Remove the chicken from the grill and let it rest for 5 minutes before serving. Garnish with chopped fresh parsley.
Notes
- For a spicier version, add more red pepper flakes or a dash of hot sauce to the marinade.
