Description

A comforting and hearty pizza soup that combines all the flavors of your favorite pizza in a warm, delicious bowl.


Ingredients

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) tomato sauce
  • 2 cups vegetable broth (or chicken broth)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 cup sliced pepperoni
  • 1 cup sliced mushrooms (optional)
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.
  2. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the diced bell pepper, diced tomatoes, tomato sauce, and vegetable broth to the pot. Stir in the oregano, basil, red pepper flakes (if using), and season with salt and pepper.
  4. Bring the mixture to a simmer and let it cook for 15-20 minutes, stirring occasionally.
  5. Add the sliced pepperoni and mushrooms (if using) to the soup and simmer for another 5 minutes.
  6. Ladle the soup into bowls and top each serving with shredded mozzarella cheese. You can place the bowls under the broiler for 2-3 minutes to melt the cheese if desired.
  7. Garnish with fresh basil leaves before serving.

Notes

  • For a creamier soup, stir in ½ cup of heavy cream just before serving.
