Ingredients

  • 1 cup mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup brewed espresso, cooled
  • 1/2 cup pistachio-flavored liqueur (such as Frangelico)
  • 24 ladyfinger cookies
  • 1/2 cup finely chopped pistachios
  • Cocoa powder for dusting

Instructions

  1. In a large mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
  2. Gently fold in the mascarpone cheese until well combined and smooth.
  3. In a shallow dish, combine the cooled espresso and pistachio liqueur.
  4. Quickly dip each ladyfinger into the espresso mixture, ensuring they are soaked but not soggy.
  5. In a 9×13 inch dish, layer half of the soaked ladyfingers on the bottom.
  6. Spread half of the mascarpone mixture over the ladyfingers, smoothing it out evenly.
  7. Sprinkle half of the chopped pistachios over the mascarpone layer.
  8. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and chopped pistachios.
  9. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  10. Before serving, dust the top with cocoa powder and garnish with additional chopped pistachios if desired.
