A delightful dessert featuring creamy pistachio mousse topped with rich chocolate ganache.
Ingredients

- 1 cup shelled pistachios
- 2 cups heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup unsweetened cocoa powder
- 1/4 cup milk
Instructions
- In a blender or food processor, blend the shelled pistachios until finely ground.
- In a medium bowl, combine the ground pistachios, 1 cup of heavy cream, sugar, vanilla extract, and salt. Whip the mixture until soft peaks form.
- In a separate bowl, whip the remaining 1 cup of heavy cream until stiff peaks form.
- Gently fold the whipped cream into the pistachio mixture until fully combined.
- Spoon the mousse into serving cups and refrigerate for at least 2 hours to set.
- For the chocolate ganache, heat the milk in a small saucepan over medium heat until it just begins to simmer.
- Remove from heat and add the chocolate chips and cocoa powder. Stir until smooth and glossy.
- Let the ganache cool slightly before drizzling it over the chilled pistachio mousse.
- Serve the mousse topped with the chocolate ganache. Enjoy!
Notes
- For a lighter version, substitute half of the heavy cream with Greek yogurt.
- Add a sprinkle of crushed pistachios on top of the ganache for added texture and flavor.
