- 2 cups chocolate ice cream, softened
- 2 cups strawberry ice cream, softened
- 2 cups pineapple ice cream, softened
- 1 cup crushed pineapple, drained
- 1 cup fresh strawberries, sliced
- 1 cup chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup chocolate syrup
- 1/4 cup whipped cream (for topping)
- Fresh strawberries and pineapple slices (for garnish)
Instructions
- Preheat your oven to 350°F. In a medium bowl, combine the chocolate cookie crumbs and melted butter. Mix until well combined and press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then let it cool completely.
- Once the crust is cooled, spread the softened chocolate ice cream evenly over the crust. Place the pan in the freezer for about 30 minutes to firm up.
- After the chocolate layer has set, spread the softened strawberry ice cream over the chocolate layer. Return the pan to the freezer for another 30 minutes.
- Next, spread the softened pineapple ice cream over the strawberry layer. Sprinkle the drained crushed pineapple and sliced strawberries on top of the pineapple ice cream. Drizzle with chocolate syrup.
- Cover the cake with plastic wrap and freeze for at least 4 hours or until firm.
- To serve, remove the sides of the springform pan. Top with whipped cream and garnish with fresh strawberries and pineapple slices. Slice and enjoy!

- For a fun twist, try using different flavors of ice cream, such as mango or vanilla.
- You can also add a layer of chopped nuts or shredded coconut for added texture.
