Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 cup basil pesto
  • 1 cup halved cherry tomatoes
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs
  • Salt and black pepper to taste
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup chopped fresh basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together the shredded chicken, basil pesto, halved cherry tomatoes, garlic powder, dried Italian herbs, salt, and black pepper until well coated.
  3. Lightly grease a 9×13 inch baking dish with olive oil and pour the chicken mixture into it, spreading it out evenly.
  4. Top the mixture with a generous layer of mozzarella and Parmesan cheese.
  5. Place the dish in the oven and bake for about 25-30 minutes, or until the cheese is golden and bubbly.
  6. Once done, take it out and allow it to rest for about 5 minutes.
  7. Finish by sprinkling fresh basil on top before serving.
