Description
A refreshing and delightful twist on traditional fruit salad, combining the flavors of peach cobbler and cheesecake.
Ingredients
Scale
- 2 cups fresh peaches, diced (about 4 medium peaches)
- 1 cup strawberries, sliced
- 1 cup blueberries
- 1 cup pineapple chunks (fresh or canned, drained)
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1 cup whipped topping (like Cool Whip)
- 1/4 cup chopped pecans (optional)
Instructions
- In a large mixing bowl, combine the diced peaches, sliced strawberries, blueberries, and pineapple chunks. Gently toss the fruit together until evenly mixed.
- In a separate bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar, vanilla extract, and cinnamon, mixing until well combined.
- Fold the whipped topping into the cream cheese mixture until fully incorporated and smooth.
- Pour the cream cheese mixture over the fruit and gently fold until all the fruit is coated.
- If using, sprinkle the chopped pecans on top for added crunch.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld and the salad to chill.
- Serve chilled and enjoy!
Notes
- For a lighter version, use low-fat cream cheese and sugar-free whipped topping.
- Add a splash of lemon juice to the fruit mixture to enhance the flavors and prevent browning.
