Ingredients

  • 12 large eggs
  • 1/2 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • Salt and pepper to taste
  • Red food coloring
  • Blue food coloring
  • Fresh parsley or chives for garnish

Instructions

  1. Place the eggs in a large pot and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, cover the pot, remove it from heat, and let it sit for 12 minutes.
  2. After 12 minutes, transfer the eggs to an ice bath to cool for at least 5 minutes. This will make peeling easier.
  3. Once the eggs are cool, gently tap them on a hard surface and peel off the shells. Rinse the eggs under cold water to remove any shell bits.
  4. Slice each egg in half lengthwise and carefully remove the yolks. Place the yolks in a mixing bowl and set the egg whites aside.
  5. Mash the yolks with a fork and add the mayonnaise, Dijon mustard, white vinegar, salt, and pepper. Mix until smooth and creamy.
  6. Divide the yolk mixture into three separate bowls. Leave one bowl plain, add red food coloring to the second bowl until you achieve a vibrant red color, and add blue food coloring to the third bowl until you reach a bright blue shade.
  7. Using a piping bag or a spoon, fill the egg whites with the red yolk mixture in a third of the eggs, the plain mixture in another third, and the blue mixture in the remaining eggs.
  8. Garnish each egg with a small piece of fresh parsley or chives for a festive touch.
  9. Chill the deviled eggs in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

  • For a spicy kick, add a dash of hot sauce or a pinch of cayenne pepper to the yolk mixture.
