A delicious twist on traditional meatloaf using ground chicken and Parmesan cheese.


Ingredients

  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped fresh parsley
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/4 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 cup marinara sauce (for topping)

Instructions

  1. Preheat your oven to 375°F.
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, onion, garlic, egg, milk, salt, pepper, and Italian seasoning. Mix until just combined, being careful not to overmix.
  3. Transfer the mixture to a loaf pan and shape it into a loaf.
  4. Spread the marinara sauce evenly over the top of the meatloaf.
  5. Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F.
  6. Let the meatloaf rest for 10 minutes before slicing. Serve warm with your favorite sides.

Notes

  • For added flavor, consider mixing in some chopped spinach or bell peppers into the meat mixture.
