- 24 fresh oysters, shucked and on the half shell
- 4 tablespoons unsalted butter
- 1 cup fresh spinach, chopped
- 1/2 cup green onions, chopped
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup Pernod or other anise-flavored liqueur
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon hot sauce (optional)
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Preheat your oven to 450°F (232°C).
- In a skillet, melt the butter over medium heat. Add the chopped spinach and green onions, cooking until the spinach is wilted, about 3-4 minutes.
- Stir in the breadcrumbs, Parmesan cheese, Pernod, Worcestershire sauce, hot sauce, salt, and pepper. Mix well and cook for another 2-3 minutes until everything is combined and heated through.
- Place the shucked oysters on a baking sheet. Spoon the spinach mixture generously over each oyster.
- Bake in the preheated oven for about 10-12 minutes, or until the topping is golden and bubbly.
- Remove from the oven and let cool slightly before serving. Garnish with lemon wedges.
Notes
- For a richer flavor, add a few dashes of your favorite hot sauce to the spinach mixture.
- Substitute the spinach with kale or Swiss chard for a different taste and texture.
