- 1 cup of mini marshmallows
- 1 cup of whipped topping (like Cool Whip)
- 1 cup of cottage cheese
- 1/2 cup of shredded coconut (optional)
- 1/4 cup of chopped pecans or walnuts (optional)
- 1 teaspoon of vanilla extract
Instructions
- In a large mixing bowl, combine the cottage cheese and vanilla extract. Stir until well blended.
- Gently fold in the whipped topping until the mixture is smooth and creamy.
- Add the drained mandarin oranges, mini marshmallows, shredded coconut, and chopped nuts (if using) to the bowl. Carefully fold everything together until evenly mixed.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld and the salad to chill.
- Serve chilled, either in individual bowls or on a large serving platter.
Notes
- For a tropical twist, substitute the mandarin oranges with pineapple chunks and add a splash of coconut milk for extra flavor.
