- 2 cups heavy whipping cream
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup orange-flavored gelatin (like Jell-O)
- 1 cup mini marshmallows
- 1 cup mandarin oranges, drained and chopped
- 1/2 cup crushed pineapple, drained
- 1/2 cup shredded coconut (optional)
Instructions
- In a large mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
- In a separate bowl, prepare the orange gelatin according to package instructions, but reduce the water by half to make it thicker. Allow it to cool slightly but not set.
- Once the gelatin is cool, fold it gently into the whipped cream mixture until well combined.
- Carefully fold in the mini marshmallows, chopped mandarin oranges, crushed pineapple, and shredded coconut if using.
- Transfer the mixture to a serving bowl or individual cups and chill in the refrigerator for at least 2 hours before serving.
Notes
- For a lighter version, substitute half of the heavy cream with Greek yogurt.
