  • 1 cup mandarin oranges, drained and chopped
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup shredded coconut (optional)

Instructions

  1. In a large mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
  2. In a separate bowl, prepare the orange gelatin according to package instructions, but reduce the water by half to make it thicker. Allow it to cool slightly but not set.
  3. Once the gelatin is cool, fold it gently into the whipped cream mixture until well combined.
  4. Carefully fold in the mini marshmallows, chopped mandarin oranges, crushed pineapple, and shredded coconut if using.
