  • 4 large egg yolks, beaten
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 pre-baked 9-inch pie crust

Instructions

  1. In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt until well combined.
  2. Gradually add the milk to the dry ingredients, whisking continuously to prevent lumps.
  3. Cook the mixture over medium heat, stirring constantly until it thickens and begins to bubble, about 10-15 minutes.
  4. Once thickened, remove the saucepan from heat. Slowly stir a small amount of the hot mixture into the beaten egg yolks to temper them, then gradually whisk the egg yolk mixture back into the saucepan.
  5. Return the saucepan to low heat and cook for an additional 2-3 minutes, stirring constantly.
  6. Remove from heat and stir in the butter and vanilla extract until fully melted and combined.
  7. Pour the chocolate filling into the pre-baked pie crust, smoothing the top with a spatula.
  8. Allow the pie to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours before serving.
