- ⅓ cup unsweetened cocoa powder
- ¼ cup cornstarch
- ¼ teaspoon salt
- 4 cups whole milk
- 4 large egg yolks, beaten
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1 pre-baked 9-inch pie crust
Instructions
- In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt until well combined.
- Gradually add the milk to the dry ingredients, whisking continuously to prevent lumps.
- Cook the mixture over medium heat, stirring constantly until it thickens and begins to bubble, about 10-15 minutes.
- Once thickened, remove the saucepan from heat. Slowly stir a small amount of the hot mixture into the beaten egg yolks to temper them, then gradually whisk the egg yolk mixture back into the saucepan.
- Return the saucepan to low heat and cook for an additional 2-3 minutes, stirring constantly.
- Remove from heat and stir in the butter and vanilla extract until fully melted and combined.
- Pour the chocolate filling into the pre-baked pie crust, smoothing the top with a spatula.
- Allow the pie to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours before serving.
Notes
- For a richer flavor, add a tablespoon of instant coffee granules to the filling mixture.
- Top the pie with whipped cream or chocolate shavings for an extra touch of elegance.
