A classic dessert featuring a creamy banana filling in a flaky pie crust, topped with whipped cream.

- 2 large ripe bananas, sliced
- 1 cup granulated sugar
- 1/3 cup all-purpose flour
- 1/4 teaspoon salt
- 2 cups whole milk
- 3 large egg yolks, lightly beaten
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1 pre-baked 9-inch pie crust
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
Instructions
- In a medium saucepan, whisk together the sugar, flour, and salt. Gradually add the milk while whisking until smooth. Cook over medium heat, stirring constantly until the mixture thickens and begins to bubble, about 5-7 minutes.
- Once thickened, remove from heat. Slowly whisk about 1 cup of the hot mixture into the beaten egg yolks to temper them. Then, return the egg mixture to the saucepan, stirring constantly. Cook for an additional 2 minutes.
- Remove from heat and stir in the butter and vanilla extract until fully combined. Allow the filling to cool for about 10 minutes.
- Place the sliced bananas in the bottom of the pre-baked pie crust. Pour the cooled custard mixture over the bananas, spreading it evenly.
- Cover the pie with plastic wrap and refrigerate for at least 4 hours, or until set.
- In a mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form. Spread or pipe the whipped cream over the chilled pie.
- Slice and serve chilled. Enjoy!

- For added flavor, consider adding a sprinkle of cinnamon or nutmeg to the custard mixture while cooking.
