Ingredients

  • 8 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 ½ cups fresh strawberries, hulled and sliced
  • 2 tablespoons strawberry jam (optional)

Instructions

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9×9-inch baking dish to form the crust. Refrigerate for 15 minutes to set.
  2. In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  4. Spread the cream cheese mixture evenly over the chilled crust in the baking dish.
  5. Arrange the sliced strawberries on top of the cheesecake layer. If desired, drizzle the strawberry jam over the strawberries for added sweetness and shine.
  6. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or until set.
