- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 8 ounces cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 ½ cups fresh strawberries, hulled and sliced
- 2 tablespoons strawberry jam (optional)
Instructions
- In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9×9-inch baking dish to form the crust. Refrigerate for 15 minutes to set.
- In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Spread the cream cheese mixture evenly over the chilled crust in the baking dish.
- Arrange the sliced strawberries on top of the cheesecake layer. If desired, drizzle the strawberry jam over the strawberries for added sweetness and shine.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or until set.
- Once set, cut into bars and serve chilled. Enjoy!

- For a chocolate twist, add ¼ cup of cocoa powder to the cream cheese mixture or use chocolate graham crackers for the crust.
- Substitute the strawberries with other berries like blueberries or raspberries for a mixed berry cheesecake bar.
