Instructions

  1. In a medium bowl, combine graham cracker crumbs and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Refrigerate for 30 minutes to set.
  2. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until well combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  4. In a small bowl, sprinkle gelatin over cold water and let it sit for 5 minutes to bloom. Then, heat the mixture in the microwave for about 10 seconds until dissolved. Stir in the crushed pineapple, orange juice, and orange zest.
  5. Divide the cream cheese mixture in half. Fold the pineapple-orange mixture into one half, creating a swirl effect.
  6. Spread the plain cream cheese mixture evenly over the chilled crust, then spoon the pineapple-orange mixture on top. Use a knife or skewer to swirl the two mixtures together for a marbled effect.
  7. Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or overnight, until set.
  8. Slice and serve chilled.
