- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 cup crushed pineapple, drained
- 1 cup orange juice
- 1 tablespoon orange zest
- 1 tablespoon unflavored gelatin
- 2 tablespoons cold water
Instructions
- In a medium bowl, combine graham cracker crumbs and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Refrigerate for 30 minutes to set.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- In a small bowl, sprinkle gelatin over cold water and let it sit for 5 minutes to bloom. Then, heat the mixture in the microwave for about 10 seconds until dissolved. Stir in the crushed pineapple, orange juice, and orange zest.
- Divide the cream cheese mixture in half. Fold the pineapple-orange mixture into one half, creating a swirl effect.
- Spread the plain cream cheese mixture evenly over the chilled crust, then spoon the pineapple-orange mixture on top. Use a knife or skewer to swirl the two mixtures together for a marbled effect.
- Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or overnight, until set.
- Slice and serve chilled.
Notes
- For a tropical twist, try adding shredded coconut to the crust or topping the cheesecake with fresh fruit before serving.
- If you prefer a sweeter cheesecake, increase the powdered sugar to taste.
