Description

Ingredients

  • 1 ½ cups crushed digestive biscuits
  • ½ cup melted coconut oil
  • 2 cups softened cream cheese
  • 1 cup confectioners’ sugar
  • 1 teaspoon almond extract
  • 1 cup chilled heavy cream
  • 1 cup freshly squeezed orange juice
  • 1 tablespoon grated orange peel
  • 1 packet (1 ounce) unflavored gelatin
  • ¼ cup ice-cold water

Instructions

  1. Mix the crushed digestive biscuits with melted coconut oil in a medium bowl until it resembles wet sand.
  2. Press the mixture into the base of a 9-inch round cake pan to create a solid crust and chill in the refrigerator.
  3. In a large bowl, whip the softened cream cheese until creamy and smooth, then gradually add confectioners’ sugar and almond extract.
  4. In another bowl, whip the chilled heavy cream until stiff peaks form and fold it into the cream cheese mixture.
  5. Warm the freshly squeezed orange juice in a small saucepan, sprinkle the gelatin over it, and stir until dissolved. Allow to cool slightly before adding grated orange peel.
  6. Fold the orange mixture into the cream cheese blend until evenly combined.
  7. Pour the filling over the prepared crust and smooth the top with a spatula.
  8. Cover and refrigerate for a minimum of 4 hours or until set firmly.
  9. Once set, gently remove from the pan, slice into wedges, and serve chilled.

Notes
