- 1 ½ cups crushed digestive biscuits
- ½ cup melted coconut oil
- 2 cups softened cream cheese
- 1 cup confectioners’ sugar
- 1 teaspoon almond extract
- 1 cup chilled heavy cream
- 1 cup freshly squeezed orange juice
- 1 tablespoon grated orange peel
- 1 packet (1 ounce) unflavored gelatin
- ¼ cup ice-cold water
Instructions
- Mix the crushed digestive biscuits with melted coconut oil in a medium bowl until it resembles wet sand.
- Press the mixture into the base of a 9-inch round cake pan to create a solid crust and chill in the refrigerator.
- In a large bowl, whip the softened cream cheese until creamy and smooth, then gradually add confectioners’ sugar and almond extract.
- In another bowl, whip the chilled heavy cream until stiff peaks form and fold it into the cream cheese mixture.
- Warm the freshly squeezed orange juice in a small saucepan, sprinkle the gelatin over it, and stir until dissolved. Allow to cool slightly before adding grated orange peel.
- Fold the orange mixture into the cream cheese blend until evenly combined.
- Pour the filling over the prepared crust and smooth the top with a spatula.
- Cover and refrigerate for a minimum of 4 hours or until set firmly.
- Once set, gently remove from the pan, slice into wedges, and serve chilled.
Notes
- For added flavor, layer fresh berries or drizzle chocolate sauce on top before serving.
- Substitute orange juice with grapefruit or tangerine juice for a different taste.
