Description

A delightful no-bake dessert that combines layers of cream cheese, vanilla pudding, and gingerbread cookies, topped with crushed peppermint and sprinkles, perfect for the holiday season.


Ingredients

  • 1 package (8 ounces) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 2 cups milk
  • 1 package (12 ounces) gingerbread cookies or graham crackers
  • 1 cup crushed peppermint candies or candy canes
  • 1 cup red and green sprinkles
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  2. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  3. In another bowl, whisk together the instant vanilla pudding mix and milk until smooth and thickened, about 2 minutes.
  4. In a 9×13 inch dish, layer half of the gingerbread cookies or graham crackers on the bottom. Spread half of the cream cheese mixture over the cookies, followed by half of the vanilla pudding mixture.
  5. Sprinkle half of the crushed peppermint candies and half of the sprinkles over the pudding layer.
  6. Repeat the layers with the remaining cookies, cream cheese mixture, pudding mixture, and top with the remaining crushed peppermint and sprinkles.
  7. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the layers to set.
  8. Before serving, garnish with fresh mint leaves if desired.

Notes

  • For a chocolate twist, use chocolate pudding mix instead of vanilla and add chocolate sprinkles on top.
  • Substitute the peppermint candies with crushed nuts or dried fruit for a different flavor profile.
