Description

A delicious and easy No Bake Cheesecake Parfait layered with creamy cheesecake and topped with cherry pie filling.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 can (21 ounces) cherry pie filling

Instructions

  1. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined. Press the mixture evenly into the bottom of serving glasses or bowls to form the crust layer.
  2. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated and creamy.
  3. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined and fluffy.
  4. Layer the cheesecake mixture over the graham cracker crust in each glass, filling them about halfway. Spoon cherry pie filling on top of the cheesecake layer, then add another layer of the cheesecake mixture. Finish with a dollop of cherry pie filling on top.
  5. Refrigerate the parfaits for at least 2 hours to allow them to set before serving.

Notes

  • For a chocolate twist, substitute half of the graham cracker crumbs with crushed chocolate cookies.
  • For a fruit variation, try using blueberry or strawberry pie filling instead of cherry.
