Ingredients

  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar

  • 1 cup heavy whipping cream
  • 2 cups fresh blueberries
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice

Instructions

  1. In a medium bowl, combine graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Chill in the refrigerator for 30 minutes.
  2. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  4. Spread the cream cheese mixture evenly over the chilled crust in the springform pan. Smooth the top with a spatula and refrigerate for at least 4 hours or until set.
  5. In a small saucepan over medium heat, combine the blueberries, granulated sugar, and lemon juice. Cook for about 5-7 minutes, stirring gently until the blueberries start to break down and release their juices. Remove from heat and let cool.
  6. Once the cheesecake is set, pour the blueberry mixture over the top, spreading it evenly. Return to the refrigerator for an additional hour to chill.
  7. Carefully remove the sides of the springform pan before slicing and serving.
