Ingredients

  • 1 cup fresh blackberries, plus extra for garnish
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 teaspoon unflavored gelatin
  • 2 tablespoons cold water

Instructions

  1. In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom.
  2. In a saucepan over low heat, gently warm the gelatin mixture until dissolved, then remove from heat and set aside.
  3. In a blender or food processor, puree the blackberries until smooth.
  4. Strain the puree through a fine mesh sieve to remove the seeds, if desired.
  5. In a large mixing bowl, combine the blackberry puree, lemon juice, and dissolved gelatin.
  6. In another bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  7. Gently fold the whipped cream into the blackberry mixture until fully combined.
  8. Spoon the mousse into individual serving dishes and refrigerate for at least 2 hours or until set.
  9. Garnish with fresh blackberries before serving.

Notes

  • For a lighter version, substitute half of the heavy cream with Greek yogurt.
  • You can also use frozen blackberries; just thaw and drain excess liquid before pureeing.
