A light and creamy no-bake dessert made with fresh blackberries, perfect for a fruity indulgence.

- 1 cup fresh blackberries, plus extra for garnish
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 teaspoon unflavored gelatin
- 2 tablespoons cold water
Instructions
- In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom.
- In a saucepan over low heat, gently warm the gelatin mixture until dissolved, then remove from heat and set aside.
- In a blender or food processor, puree the blackberries until smooth.
- Strain the puree through a fine mesh sieve to remove the seeds, if desired.
- In a large mixing bowl, combine the blackberry puree, lemon juice, and dissolved gelatin.
- In another bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Gently fold the whipped cream into the blackberry mixture until fully combined.
- Spoon the mousse into individual serving dishes and refrigerate for at least 2 hours or until set.
- Garnish with fresh blackberries before serving.
Notes
- For a lighter version, substitute half of the heavy cream with Greek yogurt.
- You can also use frozen blackberries; just thaw and drain excess liquid before pureeing.
