Ingredients

  • 2 large boneless, skinless chicken breasts
  • 1 cup mushrooms, finely chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, add 1 tablespoon of olive oil. Sauté the mushrooms and garlic until the mushrooms are soft and any liquid has evaporated, about 5-7 minutes. Remove from heat and let cool slightly.
  3. In a mixing bowl, combine the sautéed mushrooms, cream cheese, Parmesan cheese, breadcrumbs, thyme, salt, and pepper. Mix until well combined.
  4. Using a sharp knife, carefully slice a pocket into each chicken breast, being careful not to cut all the way through.
  5. Stuff each chicken breast with the mushroom mixture, dividing it evenly between the two. Secure the openings with toothpicks if necessary.
  6. In the same skillet, heat the remaining tablespoon of olive oil over medium-high heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  7. Transfer the seared chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
  8. Remove from the oven and let rest for 5 minutes before removing toothpicks. Garnish with fresh parsley before serving.

  • For added flavor, consider adding spinach or sun-dried tomatoes to the stuffing mixture.
  • If you prefer a lighter option, use low-fat cream cheese and skip the breadcrumbs for a lower-carb version.
