  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 4 medium potatoes, thinly sliced
  • 1/4 cup fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
  4. Stir in the diced tomatoes, kidney beans, corn, chili powder, cumin, salt, and black pepper. Cook for an additional 5 minutes, allowing the flavors to meld.
  5. In a greased 9×13 inch baking dish, layer half of the sliced potatoes evenly across the bottom.
  6. Spoon half of the beef mixture over the potatoes, then sprinkle with 1 cup of cheddar cheese.
  7. Repeat the layers with the remaining potatoes, beef mixture, and top with the remaining cheese.
  8. Cover the baking dish with aluminum foil and bake for 45 minutes.
  9. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
  10. Let the casserole cool for 5 minutes before serving. Garnish with fresh parsley if desired.
