- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 ounces) diced tomatoes, undrained
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups shredded cheddar cheese
- 4 medium potatoes, thinly sliced
- 1/4 cup fresh parsley, chopped (optional for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
- Stir in the diced tomatoes, kidney beans, corn, chili powder, cumin, salt, and black pepper. Cook for an additional 5 minutes, allowing the flavors to meld.
- In a greased 9×13 inch baking dish, layer half of the sliced potatoes evenly across the bottom.
- Spoon half of the beef mixture over the potatoes, then sprinkle with 1 cup of cheddar cheese.
- Repeat the layers with the remaining potatoes, beef mixture, and top with the remaining cheese.
- Cover the baking dish with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
- Let the casserole cool for 5 minutes before serving. Garnish with fresh parsley if desired.
Notes
- For a spicier kick, add diced jalapeños or a teaspoon of cayenne pepper to the beef mixture.
- Substitute ground turkey or chicken for a leaner option, or use a mix of ground meats for added flavor.
