- 2 cups cooked spaghetti
- 1 pound boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup diced bell peppers (red, green, or yellow)
- 1 cup diced onion
- 1 cup corn (canned or frozen)
- 1 cup diced tomatoes (fresh or canned)
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro (optional)
- 1 tablespoon lime juice
Instructions
- Preheat your oven to 350°F (175°C).
- In a large pot, cook the spaghetti according to package instructions until al dente. Drain and set aside.
- Season the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.
- In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked. Remove from the skillet and let rest for a few minutes before slicing into strips.
- In the same skillet, add the diced bell peppers and onion. Sauté for about 5 minutes until softened. Add the corn and diced tomatoes, cooking for an additional 3-4 minutes.
- In a large mixing bowl, combine the cooked spaghetti, sautéed vegetables, sliced chicken, sour cream, lime juice, and half of the Monterey Jack cheese. Mix well to combine.
- Transfer the mixture to a greased 9×13 inch baking dish. Top with the remaining Monterey Jack cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro if desired before serving.
Notes
- For a spicier kick, add diced jalapeños or a dash of hot sauce to the vegetable mixture.
- Substitute the Monterey Jack cheese with cheddar or pepper jack for a different flavor profile.
