Monterey Chicken Spaghetti is a flavorful and hearty dish that combines tender chicken, colorful vegetables, and creamy cheese, all baked to perfection.


Ingredients

  • 2 cups cooked spaghetti
  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup diced bell peppers (red, green, or yellow)
  • 1 cup diced onion
  • 1 cup corn (canned or frozen)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro (optional)
  • 1 tablespoon lime juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, cook the spaghetti according to package instructions until al dente. Drain and set aside.
  3. Season the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.
  4. In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked. Remove from the skillet and let rest for a few minutes before slicing into strips.
  5. In the same skillet, add the diced bell peppers and onion. Sauté for about 5 minutes until softened. Add the corn and diced tomatoes, cooking for an additional 3-4 minutes.
  6. In a large mixing bowl, combine the cooked spaghetti, sautéed vegetables, sliced chicken, sour cream, lime juice, and half of the Monterey Jack cheese. Mix well to combine.
  7. Transfer the mixture to a greased 9×13 inch baking dish. Top with the remaining Monterey Jack cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro if desired before serving.

Notes

  • For a spicier kick, add diced jalapeños or a dash of hot sauce to the vegetable mixture.
  • Substitute the Monterey Jack cheese with cheddar or pepper jack for a different flavor profile.
