Mojo Potatoes are flavorful roasted baby potatoes marinated in a zesty citrus and garlic sauce, perfect as a side dish.

- 2 pounds baby potatoes, halved
- 1/4 cup olive oil
- 1/4 cup fresh orange juice
- 1/4 cup fresh lime juice
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh cilantro, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the olive oil, orange juice, lime juice, minced garlic, cumin, smoked paprika, salt, and black pepper. Whisk until well combined.
- Add the halved baby potatoes to the bowl and toss until they are evenly coated with the marinade.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the potatoes are tender and golden brown, stirring halfway through for even cooking.
- Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro before serving.
Notes
- For a spicier kick, add 1/2 teaspoon of red pepper flakes to the marinade.
- You can substitute the baby potatoes with sweet potatoes for a different flavor profile.
