  • 2 cups all-purpose flour
  • 1 teaspoon baking powder

  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a bowl, combine the chopped dates and boiling water. Stir in the baking soda and vanilla extract. Let it sit for about 15 minutes to soften the dates.
  3. In a large mixing bowl, cream together the granulated sugar, brown sugar, and softened butter until light and fluffy. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  5. Fold in the date mixture and nuts, if using, until evenly distributed.
  6. Pour the batter into the prepared baking pan and spread it evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
