- ½ cup brown sugar, packed

- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a bowl, combine the chopped dates and boiling water. Stir in the baking soda and vanilla extract. Let it sit for about 15 minutes to soften the dates.
- In a large mixing bowl, cream together the granulated sugar, brown sugar, and softened butter until light and fluffy. Add the eggs one at a time, mixing well after each addition.
- In another bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Fold in the date mixture and nuts, if using, until evenly distributed.
- Pour the batter into the prepared baking pan and spread it evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

- For a richer flavor, consider adding a teaspoon of almond extract along with the vanilla.
