Description
A deliciously moist chocolate cake soaked in sweetened condensed milk and topped with a rich coconut-pecan mixture.

- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 can (14 ounces) sweetened condensed milk
- 1 cup shredded sweetened coconut
- 1 cup chopped pecans
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1/4 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well combined.
- Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until smooth. Stir in the boiling water until fully incorporated (the batter will be thin).
- Pour the batter into the prepared baking pan. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for 10 minutes.
- Using the handle of a wooden spoon, poke holes all over the top of the cake. Pour the sweetened condensed milk evenly over the cake, allowing it to soak into the holes.
- In a medium bowl, combine the shredded coconut, chopped pecans, heavy cream, vanilla extract, and powdered sugar. Mix until well combined.
- Spread the coconut-pecan mixture evenly over the top of the cake. Refrigerate for at least 2 hours before serving to allow the flavors to meld.
Notes
- For a richer flavor, try adding a teaspoon of espresso powder to the batter.
- You can also substitute walnuts for pecans for a different nutty flavor.
