Ingredients

  • 1 cup heavy cream
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate pudding mix
  • 1 1/2 cups milk
  • 1/2 cup chocolate chips (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a medium bowl, combine the crushed chocolate sandwich cookies and brewed coffee. Mix until the cookies are well-coated and set aside to soak for about 10 minutes.
  2. In a separate large bowl, beat the heavy cream until stiff peaks form. Set aside.
  3. In another bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  4. Gradually add the chocolate pudding mix and milk to the cream cheese mixture, mixing until well combined and smooth.
  5. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  6. In a large serving dish or individual cups, layer half of the soaked cookie mixture, followed by half of the cream cheese mixture. Repeat the layers with the remaining cookie and cream cheese mixtures.
  7. If desired, sprinkle chocolate chips on top for added texture and flavor.
  8. Cover and refrigerate for at least 2 hours to allow the flavors to meld and the cake to set.
  9. Before serving, garnish with fresh mint leaves if desired.
