Description

A delicious Mocha Ice-Cream Cake made with layers of coffee and chocolate ice cream, topped with whipped cream and chocolate syrup.


Ingredients

  • 2 cups chocolate sandwich cookies, crushed
  • 4 tablespoons unsalted butter, melted
  • 1 quart coffee ice cream, softened
  • 1 quart chocolate ice cream, softened
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate syrup
  • 1/2 cup brewed coffee, cooled

Instructions

  1. Preheat your oven to 350°F. In a medium bowl, combine the crushed chocolate sandwich cookies and melted butter. Mix until the crumbs are evenly coated.
  2. Press the cookie mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let it cool completely.
  3. Once the crust is cool, spread the softened coffee ice cream evenly over the crust. Place the pan in the freezer for about 30 minutes to firm up.
  4. After the coffee ice cream has set, spread the softened chocolate ice cream over the coffee layer. Return the pan to the freezer for another 30 minutes.
  5. In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  6. Remove the cake from the freezer and spread the whipped cream over the top of the chocolate ice cream layer. Drizzle chocolate syrup and cooled brewed coffee over the whipped cream.
  7. Cover the cake with plastic wrap and freeze for at least 4 hours, or until firm.
  8. Before serving, let the cake sit at room temperature for about 10 minutes to soften slightly. Carefully remove the sides of the springform pan and slice to serve.

Notes

  • For a richer flavor, try adding a layer of crushed espresso beans between the ice cream layers.
  • You can also substitute the coffee ice cream with vanilla for a milder taste.
